What makes them unique
The caves are excavated in sandstone rocks, which are sedimentary rocks composed of granules of average size of a sand, and these, even better than the cellar or modern refrigerators, create a special microclimate, thanks to their special humidity, temperature and bacterial microflora; these conditions give the cheese an inimitable aromatic flavor and a natural maturing layer in the cave: all the taste of a great authentic cheese.
